Cookie Bowls

Bowls made from sugar cookies??

Yep! And they are super yummy filled with some ice cream ( My fave: Carmel Cheesecake but sadly the store had run out when I was shopping, so I settled for Cake Batter. But oh how I longed for that Carmelly Cheesecake!)

Even better with a touch of chocolate sauce!!

To make:

Just make your favorite sugar cookie mix, roll out then cut out circles, big enough to cover the under side of a cupcake pan. And just spray pan with some non-stick baking spray. The cookies will just wiggle off if you coat the pan well.

Would also be yummy with:
Some fruit, like strawberries & raspberries then topped with some whip cream,
Chocolate mousse
Turn into individual pudding pies
Individual cheesecakes, etc

Enjoy!!

B.Y.O.M.

Over the weekend we had a B.Y.O.M. (bring your own meat) BBQ party to celebrate our new home and to welcome in summer.

A week before the BBQ my mother and I made some invitation to hand out. At first we were just going to do a plain old card style invite with a picture of the sun and maybe some food. As we started to make them I came up with a brilliant idea to just make a huge (and I mean huge) steak and just print out the invite and glue it to the back, so that's what we did.

They turned out super cute, different, and so clever plus everyone loved them!

As a desert for the party I decided to make hamburger cake pops.

Yummy little cake pops that have layers of different colored chocolate.
These didn't turn out perfect like I had hoped. For some reason I struggle when trying to dip things in chocolate but they still were yummy (that stand was full of cake pops at the beginning of the BBQ) and everyone totally got that they were hamburgers. Job well done!

Oreo Truffle Pops

The other day my husband came home from work and told me that his job was having a potluck lunch and that he was in charge of bringing some kind of yummy treat. As soon as he told me I knew I wanted to make these easy yet sssoooo yummy Oreo Truffles.

What You Need:

1 package Oreo cookies (use cookie including the cream center)
1 8oz. package cream cheese (room temperature)
chocolate bark or coating
A pretty colored chocolate (optional)

1. Finely crush cookies in a food processor or place them in a Ziploc bag and use a rolling pin.

2. Stir in softened cream cheese. Use the back of a large spoon to help mash the two together.

3. Roll out 1″ balls or use a small ice cream scoop (which I used....makes every ball the same size, so much easier) and place on cookie sheet covered with wax paper.

4. My husband really wanted these on lollipop sticks. He was worried about people touching all of them if they weren't. So before you pop these in the freezer just add (if you want) some lollipop sticks to each one.

5. While the pops were freezing I printed out the emblem for my husbands work, placed that under a piece of wax paper and with my pretty blue colored chocolate traced my picture to make cute decorations for the truffles

6. After that you want to melt your chocolate as directed on the package. Pull truffles out of freezer and then dip them into chocolate, tap off extra and set aside on wax paper to dry.

7. Now the fun part, decorate your treats. You can use more chocolate, sprinkles, extra cookie crumbs, What ever you can think of.

I made a couple batches for my husbands work. The ones on the green board are made with Mint Oreos and the ones on the white are just regular.....both are equally good!!!!
One batch makes about 35 truffles.  ENJOY!!!

Not So Awesome Surprise Cake

Even though I'm not so happy with the way my Valentine's Day heart surprise cake turned out I still thought I would share it.

I knew as soon as all my white cake was done baking that I used a pan that was way to big. It didn't give me the height I needed to carve out the heart without breaking threw the top and bottom of the cake. But I still tried.

Just looks like a regular cake right?

But when you cut into it....

Theres a heart surprise!!!!

I so wanted this to turn out perfect. A perfect cake with a perfect heart with perfect frosting. Oh well, this was a very good learning experience (and it was still really yummy!!!!) I can't wait to try it again next year.
